Mine was the same and I'm the same as it comes to electrics/mechanics, have "fixed it" after I had some oil in coolant (long story).
Get the expansion vessel (bottle) off I think pliers, flat medium screwdriver and 10mm wrench was needed, (obviously you'll need to disconnect the sensor) make sure you've got absolutely identical sensor and do try to get it out without damaging bottle... mine wouldn't come out, or seized, that I wouldn't want to start getting hammer, drill out etc

Got plastic airsoft shots ("bearings") handful, Fairy, luke warm water, taped up few outlets and kept on shaking until it was absolutely like new on the inside. For the testing purpose, fitted everything back and it was fine, although if parked to the side, light does come up, as it should, binned the sensor since.

Re: Coolant light

I recently had an embarrasing experience with my coolant level.

It started during the extreme hot days we had on a day of steep hills followed by motorway.  It started occasionaly flickering and I found I could affect it by lifting or depressing the throttle.  I didn't know what it was indicating as I had never seen it before.  A closer look showed it to look like a shower head suspended over a pool of liquid.

But I already had it in my head that it was oil related due to the hard miles and hot temps.  So I saw it as a typicaly French, surrealist symbol of a sump and oil return.  I know it sounds daft but I was a bit panicked as I had many miles to do in the next few days and had "oil problem" fixated in my brain.

After what turned out to be an unneccissary oil and filter change there was obviously no difference.  After a lot of head scraching I was at the point of cancelling arrangements and taking it in for an oil pressure test.  At this point someone stopped and asked what the trouble was.  As I explained, I turned on the ignition to show the warning light.  "Isn't that your coolant level" he asked!

It has rarely needed a drop in 6 years and didn't even look low when I checked it.  But about 1/2" of water and no more light.

What an idiot!

Re: Coolant light

When it came on on my old car I'd never seen the symbol before, and I was like "what the hell is that?!"

Obviously many vans later I've had plenty of experience of that light now  roll

Yes, the one, that senses, if current isn't getting through two points of it right in the middle of the bottle- light comes on. Being extremely dirty ends up as a false reading as if not enough coolant the same.
