As tee_cee says without a deal.... back to the good old days of international driving permit and green card insurance.........
I would imagine we'd still be bound with the current check list also ........... Spare bulb kit, Warning triangle, Breathalysers, Hi-viz for every person in vehicle, If you wear specs -- A spare pair.......
This is just bits of top of my head for France and Spain check list
And there's the burgeoning enviromental clean city movements to contend with ..............

On our trips to her fathers and subsequent run over to Costa Brava and back in the van etc --- I've budgeted for 37mpg.........

In reality van has returned 40mpg  at 60-65mph max where poss for 99% of route..........
{I also tend to round up google mileage total by another couple hundred to allow for our detours-lost etc}

What takes you say an hour on péage could take twice as long on National route as that's where most of the natives are and you'll be routed through town probably..............
Where tee_cee mentions Millau Viaduct ... paying toll and crossing bridge takes 5-10 mins.............
Expect if you come off motorway to go through Millau it's self -- 45 mins -1hr at least before rejoining M/way
But it's all part of the adventure ...........
But also expectations.......

Handy couple of reference web pages.......

I've used the second one (IIRC there's a Spain version also) to good effect by printing routes and making notes on to take along as a on the spot reminder if needed ..........
Their also worth a quick look before departure for a refresh and any changes update ...........
{The one that always gets me is turning off speed cameras alerts on  my Garmins}.............
For me (old school point of view) Have a map aswell don't just rely on sat nav..........
{It will get you there .... Not necessarily as you planned} personally I find them most useful for the last few miles in
